They're also rated a green “Best Choice” by the Monterey Bay Aquarium's Seafood Watch, letting consumers know they're making an environmentally sustainable purchase. It's that constant steady flow of pristine, glacier-fed water that gives the fish the edge; they're firmer, leaner creatures than their sea-reared cousins.
