SMOKED PUMPKIN SALAD WITH SPENT CITRUS DRESSING
SERVES: 4 TIME: 2.5 hours
This is a great recipe to discover the wonderful taste of a spent lemon dressing. Once you've extracted all the flavours from the lemon, it really is spent! But don't feel sorry for it – that lemon has done its job, infusing the oil (and dressing) with a huge flavour punch.
INGREDIENTS
½ pumpkin, halved, seeded, wedged
¼ cup pumpkin seeds, roasted
6 leaves of silverbeet or red chard, cut into
large pieces
4 tbsp grapeseed oil sea salt spent citrus dressing (see recipe at right)
METHOD

Fire up the cold smoker with manuka chips. Place the cut pumpkin into it for 2 hours.

Preheat the oven to 180°C.

Cover the bottom of a roasting tray with greaseproof paper. Remove the pumpkin from the cold smoker and arrange on the tray. Roast in the oven until tender or when a knife can easily pass through a segment, about 25-30 minutes.

Preheat a large serving platter and arrange the roasted pumpkin in a circle.

Heat a small saute pan. Add a touch of oil, then the silverbeet and a pinch of sea salt. Saute quickly, then lay over the top of the pumpkin. Top with the pumpkin seeds, then drizzle with dressing.
