was the choice of celebrity chef Heston Blumenthal when he opened a temporary version of The Fat Duck restaurant in Melbourne a few years back. It was also the first salmon farm in Australasia to receive Best Aquaculture Practice certification. Its freshwater king salmon swims in glacier-fed water that flows down from the mountains of Aoraki/Mt Cook National Park at a rate of 7.5 million litres per minute. The company insists that it's so pure it's possible to drink the water above and below the farm. There's a Mt Cook Alpine Salmon store situated in the most picturesque of spots on SH8 at the Pūkaki Information Centre. Scoffing salmon sashimi by Lake Pūkaki is just goodness heaped upon goodness.
